Fried Egg Sandwich
serves 2
4 slices of bread, I kept the crusts on but you can cut them off if you'd like
3 eggs
splash of milk
a few slices of white cheddar
a few arugula leaves
salt and pepper
chives optional
1 Prepare two sandwiches with a few slices of cheddar, some leaves of arugula, and salt and pepper.
2 In a small bowl, whisk 1 egg with a splash of milk. Heat a pan with olive oil over medium heat.
3 Dip the two sandwiches into the egg mixture and let the excess drip. Pan fry the two sandwiches until golden brown and the cheese is melted. Set sandwiches aside on plates.
4 Crack the two remaining eggs into the pan, until the white is set but the yolks are still runny.
5 Top the sandwiches with the fried eggs and serve. Garnish with chives (optional)

Happy New Year! This sandwich looks great, and so easily adaptable. I'm impressed you made breakfast the next morning. We were also out until about 4, and the next morning all I could muster was leftovers from the night before :) I agree eggs are best after a night out!
Saw this this morning and thought it looked good enough to try!! We used grainy bread, dried oregano, and gruyere! Yum! Good call on this one!

Oh man that looks good. Though, I'd definitely have to find someone else to prepare it for me were I hungover - the extent of my abilities at that point is hugging a bottle of Gatorade.

That is so what I needed after our wine-soaked New Year's Eve. I made a fried egg over hash but I think I needed the cheesy bread to soak up some of the alcohol! Looks terrific. And I love that cookbook.

I completely agree. You can't go wrong with egg, cheese and bread. Along with some coffee and of course lots of water!
